Matcha Mousse Cake

1. the cake

mix 2 egg yolks with 10g sugar

add 35g milk, 20g melted butter

sift in 45g cake flour and 4g matcha powder

beat 2 egg white with 40g sugar + pinch of salt + a little bit lemon juice

Fold egg yolk mixture into egg white mixture

Bake 180C in 20 minutes. Once done let it cool down completely. Use 8cm mold to cut the cake in two circles.

2. the white mousse

melt 50g white chocolate

add 80g warm milk and 3 gelatine sheets

whisk 130g heavy cream

mix the chocolate mixture with the whipped cream

Arrange the cake: One layer cake, one layer of white mouse then another layer of cake. Chill in the fridge in 20 minutes.

3. Matcha mousse

40g warm milk + 3g matcha

pour the matcha mixture into the white mousse
